Healthy (er) Cheese-cake

A few weeks ago was the bf's birthday so I whipped up a healthier little birthday treat for the two of us and I was pleasantly surprised...super yummy!

1 pack of fat free sugar free cheesecake pudding mix
1 1/2 cups skim milk
Some BIG spoon-fulls of cool-whip
Crushed up gram crackers
Strawberries (Frozen or fresh)

Mix the pudding mix and skim milk for about a minute or two then add about 3-4 spoon fulls of cool whip...(I went a little overboard)
Sprinkle some crushed graham crackers at the bottom of a small bowl (or 2 or 3...or 4)
Scoop some of the yummy deliciousnesss on top, throw on some cut up strawberries, coat with some more graham crackers then plop it in the fridge for a bit.
When you're ready to eat it cover with a dollop of whip cream and VOILA!


Over night Oats!

  • ½ cup rolled oats (not quick cooking)
  • ½ cup plain Greek yogurt (I prefer non-fat)
  • 2/3 cup milk
  • 1 tablespoon chia seeds
Place all the ingredients in a bowl or a jar. Cover it and keep it in the fridge over night.  In the morning just stir and serve!  You can also add whatever tasty treats you would like...  I've used honey,and cashews, blueberries, strawberries and bananas.. The options are pretty much endless!

1 Tangerine Sliced
A handful of mint leaves
The juice of half a lemon

Drink up pretties!
